What's for Dinner- Baked Macaroni and Cheese

Baked Macaroni and Cheese






Makes: 4 to 6 servings

Time: About 45 minutes

One of the most popular recipes in the original How to Cook Everything, which I attribute to too many people growing up with what the Canadians call “Kraft dinner.” The real thing is rich, filling, delicious, and dead easy. You can change the type of cheese you use: Try blue cheese, goat cheese, smoked Gouda, or even mascarpone. Or mix in some crisp-cooked chunks of thick-cut bacon or pancetta, about 1/2cup.

Salt

2 1/2 cups milk (low-fat is fine)

2 bay leaves

1 pound elbow, shell, ziti, or other cut pasta

4 tablespoons (1/2stick) butter

3 tablespoons all-purpose flour

11/2cups grated cheese, like sharp cheddar or Emmental

1 /2cup freshly grated Parmesan cheese

Freshly ground black pepper

1 /2cup or more bread crumbs, preferably fresh

1. Heat the oven to 400°F. Bring a large pot of water to a boil and salt it.

2. Heat the milk with the bay leaves in a small saucepan over medium-low heat. When small bubbles appear along the sides, about 5 minutes later, turn off the heat and let stand. Cook the pasta in the boiling water to the point where you would still think it needed another minute or two to become tender. Drain it, rinse it quickly to stop the cooking, and put it in a large bowl.

3. In a small saucepan over medium-low heat, melt 3 tablespoons of the butter; when it is foamy, add the flour and cook, stirring, until the mixture browns, about 5 minutes. Remove the bay leaves from the milk and add about 1/4cup of the milk to the hot flour mixture, stirring with a wire whisk all the while. As soon as the mixture becomes smooth, add a little more milk, and continue to do so until all the milk is used up and the mixture is thick and smooth. Add the cheddar or Emmental and stir.

4. Pour the sauce over the pasta, toss in the Parmesan, and sprinkle with salt and pepper. Use the remaining 1 tablespoon butter to grease a 9 ×13-inch or like-size baking pan and turn the pasta mixture into it. (You can make the dish to this point, cover, and refrigerate for up to a day; return to room temperature before proceeding.) Top liberally with bread crumbs and bake until bubbling and the crumbs turn brown, 15 to 20 minutes. Serve piping hot.

What's for Dinner- Green Bean and Pasta Salad

This one is not so much for Dinner but for Lunch. I noticed on my days off, I tend to either go for some fast food or just snack all afternoon until it is time to fix dinner. And usually my choices aren't so good.

So on my next days off I am making this for Lunch.




Green Bean and Pasta Salad

Cook 1 1/4 cup Penne Pasta per package directions. Add 1cup Green Beans during the last 3 minutes of the pasta's cook time. Drain and run under cool water to cool.

Toss Pasta and Green Beans with 1 cup Red or Kidney Beans (I don't like either so I used Chick Peas).

Add 1/4 cup of Flat Leaf Parsley, 2 T Parmesan Cheese, 2 T Olive Oil, 2 T Lemon Juice, 1/2 tsp Salt, 1/4 tsp Pepper. Toss to coat.

Divide into 2 containers and refrigerate.

What's for Dinner- Baked Egg Roll

Baked Egg Roll

6 Eggs
1 cup Milk
½ cup Flour
½ tsp Salt
¼ tsp Pepper
1 cup Shredded Cheese


Place Eggs and Milk in Blender. Add the Flour, salt and pepper. Cover and process until smooth.

Pour into a greased 9 x 13 Pan.

Bake at 450 degrees for 20 minutes or until eggs are set.






Sprinkle with Cheese and any other desired filling. I used tomatoes and portabella mushrooms. Roll up in pan starting with a short side. Place seam side down on a serving platter.








Cut in ¾ inch slices.

You can make this recipe with fresh eggs and milk or you can make it a food storage recipe by replacing the fresh ingredients with the following:



1/3 cup Dehydrated Eggs and 2/3 cup Water for the Eggs

3 Tablespoons Powdered Milk and 1 cup water for the Milk

What's for Dinner- Zucchini Bread

Zucchini Bread

  • 3 cups whole wheat flour
  • 3 cups unbleached flour
  • 2 cups brown sugar
  • 2 T baking powder
  • 2 tsp ground cinnamon
  • 1/2 tsp salt
  • 4 cups unpeeled, shredded zucchini
  • 4 eggs
  • 3 cups non fat milk
  • 1/2 cup canola oil
  • 2 tsp vanilla extract

Preheat Oven to 350 degrees

In large bowl combine the dry ingredients and stir well. Mix in Zucchini.

In a small bowl, beat the eggs, milk, oil and vanilla by hand.

Pour the liquid ingredients into the dry mixture and stir to form a thick batter.

Fill oiled loaf pans and bake bread for 1 hour or until a inserted toothpick comes out clean.

* You can also bake the bread in muffin tins. Just increase the temp to 450 degrees and bake for 25 minutes

What's for Dinner- Sautéed Carrots with Orange and Cumin

Melissa and Doug Carrot Bulk Fruits and Veggies (Bundle of 6)


Sautéed Carrots with Orange and Cumin


•Carrots (trimmed & peeled) - 1½ lbs.
•Butter - 2 tbsp
•Ground cumin - 1/8 tsp
•Salt & pepper - to taste
•Orange juice - 6 oz.



Cut carrots into thin slices.

Over medium heat, sauté carrots with butter for 4 minutes. Add cumin, salt & pepper, and orange juice and cover loosely.

Reduce heat to low and cook out all liquid.

Another Gift in a Jar- Hot Chocolate Mix

Hot Chocolate



Keep this mix on hand for a tasty and frugal way to warm up your holiday season.



Hot Chocolate Mix
5½ cups dry milk powder
1 cup plus 2 T. sugar
3/4 cup unsweetened cocoa

Combine all ingredients. Stir well.
Store in an airtight container in a cool, dry place.

Makes 7¼ cups.

* I placed mix in a pint canning jar. Put a label on with instructions and tied a bow around the jar.
There you have it.....instant Christmas Gift!




To Make Hot Chocolate
1/3 cup hot chocolate mix
3/4 cup water
1/4 tsp. vanilla extract



Bring water to a boil. Add mix and blend well. Add vanilla. Serve warm.


Makes 1 serving.

Bittman Recipe- Eggplant Parmesan

* Bittman post are recipes that I try from Kitchen Express and How to Cook Everything  by Mark Bittman

*This recipe is more of a variation of  his recipe that you can find page 297 of How to Cook Everything.





Eggplant Parmesan

I prepared my eggplant by slicing into 1/2 to 1 inch slices.

If the eggplant is not fresh and firm, do a salt prep to remove bitterness.  Liberally salt and let rest in a collinder for up to an hour. Rinse, pat dry and proceed with recipe.

I grilled the eggplant for this recipe.  Eggplant is done when it is tender, almost creamy and no dry spots.

I placed the grilled eggplant in a casserole dish.

Instead of making the Fast Tomato Sauce on page 502 , I used some pizza sauce I had leftover  in the fridge. I layered the pizza sauce on top of the grilled eggplant.

Then topped the pizza sauce with a sprinkle of mozzarella then a sprinkle of Parmesean.

I then placed the casserole dish back on the grill to melt the cheese.

Not his recipe word for word, but I think Mr. Bittman would be proud!

  Taste Test: Grilling the eggplant added a ton of flavor. I think grilling added a more meaty taste to the eggplant.

Product Review- Pilot Pens

Sounds like MAGIC but it really works! I’ll show you!

Pilot FriXion really works!!!
 
Another Pen that was in my trial pack was the Pilot G2. I was all ready familiar with this product. My Husband is a Police Officer and his pen of choice is the Pilot G2. He loves the contoured rubber grip and the Gel Ink Formula that is smooth writing and smear proof.
He says they are great for writing speeding tickets!
He uses his G2 for all of his paperwork.
 
My favorite was the Dr. Grip Gel Ink Pen. The ergonomic cushion grip was great. I have arthritis in my hands and writing can sometimes be painful. I used the Dr Grip Gel Ink Pen at my Customer Service job and it really helped with hand fatigue with all the writing that I do. In fact, The Dr Grip Gel Ink Pen was commended by The Arthritis Foundation for ease of use. It is also refillable with G2 or Q7 refills.
 
 
 
Other pens included in the pack were:

Precise Grip
Easy Touch Pro- these were another favorite of mine!

Bittman Recipe- Marinated and Grilled Flank Steak

* Tackling Bittman post are recipes that I try from How to Cook Everything and Kitchen Express by Mark Bittman





Marinated and Grilled Flank Steak

1/4 cup lime juice
2 tablespoons Nam Pla or Soy Sauce
1 teaspoon minced garlic
1 teaspoon  ground ginger
1 teaspoon sugar
salt and pepper
1 flank Steak - 2 to 2.5 pounds

Combine all ingredients in a shallow bowl or platter and marinate the steak in them for alt least 30 minutes.
If marinating time is longer than 30 minutes, refrigerate.
Near end  of marinating time, heat grill until very hot

Remove meat from marinade and dry well with paper towels. Grill the steak about 4 inches from the heat source until nicled browned. About 4 minutes per side.
Move meat to cooler part of grill and cook for another 2 minutes.

Check for doneness. Let rest for 5 minutes before cutting across the grain into thin slices.

This was awesome!!! The Meat cut like butter and melted in your mouth

Two Funny Calls

I had two funny calls last night at work:

Call 1
I had a Son call to activate services for his Father.

In the background I could hear the poor little old man saying rather loudly: "ohhhhhhhh I gotta poop. I gotta poop bad. ohhhhh I gotta poop. I gotta poop bad. Ohhhhhhh... Please help me poop. I gotta poop real bad. ohhhhhhhh I gotta poop. I gotta poop bad. ohhhhh I gotta poop. I gotta poop bad. Ohhhhhhh... Please help me poop. I gotta poop real bad" and so on.


Poor thing!




Call  2
Another one tonight was a Lady calling from a Maternity Ward.
She: I just gave birth...... a vaginal birth.....through my Vagina.
I: um......Congratualtions!
She: My Doctor says I have to be here for a couple days.
I: Would you like to activate your TV?
She: Not now..... I have to ask you a question?
I: Ok.....how may I help you?
She: How do you think I should be in here. I just had a vaginal birth.
I: I would think that would be up to your Doctor.
She: Well... I am just asking. I mean, really. It was  a vaginal birth...through the VAGINA!
I: I would have no idea. You will need to ask your Doctor about that.
Would you like for me to activate your TV?
She: Yes.

French Bread Recipe


French bread is one of my family's favorite treats. But I rarely have time to make it from scratch.

This French bread recipe is wonderful, because the dough is made in the bread machine. Just dump in the ingredients and come back a few hours later to rest it, shape it and bake it.

The end product is a crusty bread machine French bread that tastes as good as you'd find in a bakery.

Ingredients:

• 1 cup water

• 2-1/2 cups all-purpose flour

• 1/2 cup white whole wheat flour

• 3/4 tsp. salt

• 1 tsp. active dry yeast

• 1 egg, lightly beaten

• 1 Tbsp. water

Preparation:

Place water, flours, salt, and yeast in your bread machine in the order directed by the bread machine manufacturer.

Set it on the dough cycle.

When cycle is complete, punch dough down, cover it with a clean towel and let it rest for 10 minutes.

Divide dough in half. On a lightly-floured surface, roll each half into an 8 x 10 rectangle.

Starting from the long end, roll up dough, jelly-roll style. Tuck ends under.

Place dough rolls on a lightly-greased baking sheet (or one lined with parchment paper).

Cover with a clean towel and let rest 45 minutes.

Meanwhile, place a broiler pan on the lowest rack of the oven. Preheat oven to 375 degrees F.

Beat egg and water together. Brush over top of dough. Make diagonal slits across dough if you like.

Place bread on the middle oven rack and pour 1 cup of water into the broiler pan. Bake 30-35 minutes or until bread sounds hollow when lightly tapped.
