• 2 10-oz. pkgs. frozen chopped spinach
• 5 eggs
• 1 cup grated Parmesan cheese
• 4 cups herb-seasoned stuffing mix
• 1 onion, minced
• 1 cup butter, melted
• 1 tsp dried thyme, crushed
Cook and drain spinach.
Mix all ingredients together; cool.
Form into small balls.
Place on cookie sheet and bake in a 350 degree F. oven for 15 to 20 minutes.
For an easy sauce, stir together sour cream and mustard.
You can also make ahead and freeze. Then bake per above instructions
