Chicken Dijon Potato Salad
1 package (1 lb) diced Potatoes and Onions
2 cups Broccoli Florets
1 cup diced cooked chicken
2 tbsp chopped roasted red bell peppers
2/3 cup mayonnaise
2 to 3 tbsp Dijon Mustard
1 tsp sugar
In large saucepan, bring 6 cups water to boil. Add Potatoes and Onions. Boil 5 minutes.
Add broccoli, boil 2 to 3 minutes or until potatoes and broccoli are tender.
Drain and rinse with cold water. Place in medium bowl.
Stir in chicken and the rest of the ingredients.
Stir to coat.
Serve immediately or refrigerate to chill
